Today's dish; traditional Mexican hotcakes
You'll need:
For four people:
250 grams of plain flour
1 teaspoon of salt
1 teaspoon of baking powder
4 eggs
2 teaspoons of sugar
2 tablespoons of butter
250m milk
Let's get started:
It's easy to make!
Sift your plain flour then in a mixing bowl, combine the flour, salt and baking powder.
In a second bowl, add the egg, sugar, melted butter and milk. Next, slowly combine the egg mixture to the first flour mixture.
Whisk everything together until the mixture is smooth like thin cream. Allow to rest for at least 10 minutes.
Now for the fun part! Heat a frying pan on a medium heat and brush the pan with a little melted butter. Pour the batter mixture into the pan using a small ladle, creating a basic pancake shape. Cook both sides until nicely golden brown and don't be scared to flip them in the air!
Add all your favourite toppings. We had bananas and chocolate sauce.
